2. Shrimp Salad

If desired, toss in sugar and cumin to taste. Add a small amount of lime juice to a vinegar dressing and drizzle on the top.

3. Chicken Salad

You can easily use leftover grilled chicken in a salad that seniors will adore. Start by combining two tablespoons lemon juice, two-tablespoons sour cream, one-tablespoon honey and one-tablespoon Dijon mustard in a sealed container. Put the mixture in the refrigerator and let it sit for at least 24 hours. Cut the chicken into bite-sized pieces in a large bowl. Toss in one-tablespoon poppy seeds, one peeled and diced avocado, one-pint raspberries and six ounces of mixed greens. If desired, top with toasted almonds. 

4. Avocado Salad

Pitted avocados may make the perfect serving dish for a senior with a small appetite or as a side salad along with a larger meal. Start by pitting six avocadoes. Leave two of them sliced in half and dice the remaining four. Toss the diced avocadoes with one tablespoon of lemon zest, five tablespoons of lemon juice, one pound of lump crab meat, 1/4-cup mayonnaise and 1/2-cup shredded fresh basil. Garnish with radishes if desired.
